Position Overview:

As Executive Baker, you will lead all bread and pastry production, bringing authentic Mediterranean baking traditions to life while maintaining the highest standards of quality and consistency. This role oversees the bakery station from daily execution through team leadership, manages baking staff, and ensures every item leaving the kitchen reflects Motek's commitment to craftsmanship and flavor.

Responsibilities:
  • Oversee daily production of breads, pastries, and Mediterranean baked goods.
  • Ensure consistency in taste, texture, and presentation across all baked items.
  • Manage inventory, ordering, and proper storage of baking ingredients.
  • Lead the bread and pastry production team, providing hands-on guidance and skill development.
  • Monitor and maintain equipment, ensuring proper functioning and cleanliness.
  • Enforce food safety, sanitation, and health department standards.
  • Collaborate with the General Manager to align bakery output with operational and menu needs.
  • Support labor scheduling and productivity goals within the bakery station.

Requirements

  • Minimum of five (5) years of professional baking experience, including at least two (2) years in a leadership or head baker role; Mediterranean or Middle Eastern baking experience strongly preferred.
  • Culinary or baking/pastry degree, or equivalent formal training, preferred.
  • Deep knowledge of bread and pastry techniques and dough handling.
  • Strong working knowledge of food safety, sanitation, and health department regulations.
  • Experience managing inventory, ordering, and ingredient cost control.
  • Ability to lead a team in a fast-paced, hands-on kitchen environment.
  • Strong attention to detail and unwavering commitment to quality and consistency.
  • Clear communicator with a collaborative, team-oriented mindset.
  • Bilingual proficiency is a plus.
