Director of Full-Service Operations
Director of Full-Service Operations | Multi-Unit Leadership
Lead restaurants. Develop people. Deliver results.
Weis Restaurant Group (WRG) is seeking a hands-on Director of Full-Service Operations to lead performance across Good Evans and Nebraska Ale Works. This role supports two distinct full-service concepts and works directly with General Managers to build strong teams, deliver memorable hospitality, and improve restaurant results.
We are looking for a servant leader who shows up in the restaurants, listens to teams, removes obstacles, coaches with clarity, and follows through on commitments. This is a field leadership position, not a Monday-through-Friday desk role. Regular weekend work and on-site presence during busy service periods are expected.
What You'll Own
Lead, coach, and develop General Managers across assigned Good Evans and Nebraska Ale Works restaurants.
Improve sales, restaurant-level profitability, labor and food costs, and operating consistency through clear plans and follow-through.
Spend meaningful time in restaurants, including weekend and peak-service shifts, observing operations and supporting teams where needed.
Strengthen guest experience, food quality, cleanliness, dining-room service, bar operations, and guest recovery while respecting each brand's identity.
Build leadership bench strength through coaching, performance feedback, succession planning, and partnership with HR and Training.
Partner with Finance, Marketing, Facilities, and Operations to address business needs and support local growth initiatives.
What We're Looking For
Required: Proven experience leading multiple restaurants and developing restaurant managers, with accountability for operating and financial results.
Required: Strong understanding of full-service hospitality, front-of-house, kitchen and bar operations, food safety, and restaurant P&Ls.
Required: A servant-leadership approach with the ability to coach, make decisions, set expectations, and hold leaders accountable.
Required: Regular weekend availability and on-site presence during weekend service periods; flexibility for evenings and holidays as business needs require.
Required: Ability to travel regularly among assigned restaurant locations.
Preferred: Experience leading different full-service restaurant concepts, including beverage-focused operations.
How You'll Make an Impact
Success in this role means stronger General Managers, more consistent guest experiences, improved restaurant performance, and teams that have the support and accountability they need to succeed.
