Job Description:

Under the direction of the Vice President - Food & Beverage, the Director of Wine provides strategic and operational leadership for the property's wine program. This role is responsible for curating, developing, and executing a world-class wine experience that enhances the guest journey, supports revenue growth, and strengthens the property's reputation as a premier wine destination. The Director ensures excellence in wine service, education, inventory strategy, and program innovation while fostering an environment where safety, flawless execution, and exceptional guest service are paramount.

Essential Job Functions:
  • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
  • Lead the vision, strategy, and execution of the property's wine program, ensuring alignment with brand standards, guest expectations, and financial goals.
  • Develop and maintain wine lists of distinction that elevate the dining experience and enhance the property's reputation as a fine wine destination.
  • Establish and implement strategies and promotional initiatives designed to increase awareness of the wine program within the casino, local community, hospitality industry, and broader market.
  • Drive wine revenue growth through innovative programming, strategic merchandising, and alignment with guest preferences and market trends.
  • Partner with Food & Beverage leadership, Restaurant Managers, Executive Chefs, F&B Control, and Warehouse teams to optimize wine inventory strategy, stock control, product rotation, premium cellaring, and purchasing effectiveness.
  • Monitor and manage key performance indicators related to wine performance, including sales, profitability, inventory turns, stock-on-hand ratios, and cash flow efficiency.
  • Oversee wine requisitions, purchasing practices, and supplier partnerships to ensure product quality, availability, and cost-effective inventory management.
  • Cultivate strategic relationships with wine suppliers to source new releases, reserve and museum inventory, market trends, and promotional opportunities.
  • Lead the development and implementation of structured wine training and professional development programs that enhance product knowledge, service standards, and sales capability across Food & Beverage teams.
  • Champion wine education and appreciation initiatives across the property to strengthen team expertise, increase guest awareness, and reinforce the organization's wine identity.
  • Provide expert guidance to guests and leadership teams regarding wine selection, sensory evaluation, and food and wine pairing to enhance the overall dining experience.
  • Collaborate with culinary and restaurant leadership to align wine offerings with menus, concepts, seasonal programming, and guest demographics.
  • Ensure seamless communication of wine knowledge, service expectations, and program updates between front-of-house and back-of-house teams.
  • Promote and support the sale of fine wines across all outlets and dining venues within the property.
  • Participate in and support marketing, public relations, media, and brand campaigns related to the wine program in partnership with internal and external stakeholders.
  • Foster a high-performing, service-driven, and solution-oriented culture that motivates team members to exceed guest expectations and deliver operational excellence.
  • Lead by example in demonstrating a visible commitment to service excellence through the implementation and delivery of the 5F's Standards at all times.
  • Ensure team members consistently adhere to guest service standards, company policies, procedures, and operational best practices.
  • Build strong cross-functional relationships with restaurant leadership and other departments to support collaboration and operational success.
  • Conduct regular market reviews and competitive analyses of wine lists and pricing to ensure the property remains appropriately positioned in the market and industry.
  • Ensure all wine operations comply with applicable statutory and regulatory requirements, legal obligations, health and safety regulations, and ethical standards.
  • Demonstrate a commitment to responsible gaming and responsible alcohol service by proactively identifying concerns and discreetly escalating issues to appropriate leaders.
  • Reinforce the Company's Mission and Values through leadership behaviors that reflect Communication, Integrity, Fun, Respect, Accountability, Passion, and Dedication.
  • Ensure prompt and discreet notification to management and/or the Ethics Hotline of any observations involving illegal acts, policy violations, or ethical concerns.

Qualifications
  • High School Diploma or equivalent required; bachelor's degree in Hospitality Management, Business, or a related field preferred.
  • Minimum of 6-8 years of progressive food and beverage experience with significant wine-focused leadership responsibility, preferably in a luxury dining, resort, casino, or fine dining environment; or an equivalent combination of education and experience.
  • Completion of the Court of Master Sommeliers Introductory Course or comparable professional certification required; advanced sommelier certification preferred.
  • Strong expertise in wines, wine service standards, sensory evaluation, and food and wine pairing principles.
  • Demonstrated experience leading wine strategy, supplier relationships, inventory management, training programs, and sales-driving initiatives.
  • Strong financial and business acumen, with experience managing wine cost controls, pricing strategy, inventory performance, and revenue optimization.
  • Working knowledge of Point of Sale systems, wine purchasing processes, cellar management, and stock control practices.
  • Strong knowledge of health, safety, regulatory, and responsible alcohol service requirements.
  • Proven leadership, coaching, communication, and interpersonal skills, with the ability to influence across departments and lead high-performing teams.
  • Ability to thrive in a fast-paced, guest-focused environment while balancing strategic priorities and operational execution.

  • Exposure to casino related environmental factors including but not limited to secondhand smoke, excessive noise, and stress related to servicing guests in a high pressure and fast paced environment.
  • Must be able to stand for an entire shift and be able to continuously maneuver throughout the Casino areas.
  • Must be able to respond to visual and aural cues.
  • Must have the manual dexterity to operate a computer and other office equipment.
  • Must be able to lift 30 pounds and able to bend, reach and stoop on a limited basis.
