Position Summary:

The Director of Restaurants is responsible for implementing Bass Pro Shops vision and culture in all areas of food service.

Primary Responsibilities:

  • Plan and direct the functions of the Food Service Division to meet the daily needs of the operation.
  • Demonstrate fiscal management skills and assist in financial analysis, budget creation, forecasting, and inventory control for all Bass Pro Shop restaurants
  • Maintain P&L oversight related to food costs, menu design, pricing, and special events
  •  Establish and maintain favorable and effective working relationships with partners both internal and external
  • Ensure restaurant managers maintain acceptable staffing levels in all departments to build sales and improve profitability.
  • Contribute in the creation of menus and LTO’s to attract a predetermined customer market and achieve a specific margin.
  •  Produce and maintain an effective and measurable succession plan for all levels within their area.
  •  Implement effective control of food, beverage and labor costs among all responsible units through utilization of weekly inventories and systems in place.
  • Participate in the hiring and development process of all new managers for the division.
  • Assist the General Managers in driving performance and sales levels improvements for their restaurant.
  • Ensure all restaurants achieve and maintain acceptable standards of sanitation, food safety and cleanliness.
  • Review and evaluate the degree of customer acceptance of the restaurants, coffee houses and banquet service.
  • Recommend new operating and marketing policies when deemed necessary.
  • Establish and review budgets for the Food Service Division and ensure they are aligned with company goals.
  • Ensure market is showing continuous improvement in driving performance and utilizing performance management skills.
  • Responsible for all aspects of food service operations for new store openings.
  • Maintain effective communication throughout all levels of the Food Service Division, as well as, other areas of Base Camp.
  • ALL OTHER DUTIES AS ASSIGNED

Position Requirements:

  • Minimum Degree Required:    Bachelor's Degree
  • Preferred Degree:  Bachelor's Degree in Hospitality/Restaurant Management or Business Degree
  • Certificate(s) or License(s): Valid Driver’s License
  • Years of experience: Must have 5-7 years of multi-unit restaurant management experience.

KNOWLEDGE, SKILLS, AND ABILITY:

  • Excellent interpersonal, communication (verbal & written) and listening skills.
  • Ability to interact positively and professionally with people at all levels, both internally and externally.
  • Ability to select, coach, develop and retain a strong management team.
  • Be able to meet the specific requirements for alcohol and food handling, which may require licensing or certification.
  • Must have strong leadership skills and be able to effectively teach, coach and develop the Food Service Division team.
  • Willing to adapt to change.
