The Senior Scientist - Natual Products & Analytical Chemistry will identify, characterize, and optimize natural ingrefients for use in taste modulator development. This role involves applying advanced analytical techniques such as LC-MS and GC-MS to support ingredient discovery, flavor characterization and product development. The position will collaborate closely with cross-functional temas, including Flavorists, R&D and Quality, to deliver to innovate and science-based solutions for enhancing food taste profiles.
Job Responsibilities- Conducts research to identify and characterize natural ingredients relevant to taste modulation (umami, kokumi, salt reduction, bitterness masking, sweetness enhancement, etc.)
- Applies advanced analytical methods (LC-MS, GC-MS, NMR, etc) for profiling, quantification, and identification of key flavor-active compounds.
- Supports flavor development teams by providing analytical insights on raw materials, intermediates, and finished flavor systems.
- Develops and validates analytical methods to ensure accuracy and reproducibility of results.
- Collaborates with regulatory, quality assurance, and applications teams to ensure compliance with food safety, labeling and global standards.
- Prepares technical reports, data summaries, and presentations to internal teams and external stakeholders.
- Maintains laboratory instruments, ensuring proper calibration, maintenance, and documentation of analytical procedures.
- Stays current with scientific literature, ingredient technologies, and analytical innovations relevant to natural flavor chemistry and modulators.
- Performs other related duties assigned.
Qualifications- Master's degree or Ph.D. in Food Chemistry, Analytical Chemistry, Biochemistry, or related field.
- At least 5 years of relevant experience in analytical chemistry applied to food, natural products, or flavors.
- Hands-on expertise with LC-MS, GC-MS, and other advanced analytical instrumentation.
- Strong background in natural product chemistry, flavor-active compound identification, or related research.
- Experience working in flavor, fragrance, food, or biotechnology industries preferred.
- Excellent knowledge of analytical chemistry principles and instrumental methods (LC-MS, GC-MS, NMR, etc.)
- Strong ability to interpret complex analytical data and translate findings into actionable insights for product development.
- Excellent organizational skills and attention to detail, with proven ability to manage multiple projects.
- Strong problem-solving and critical thinking skills, with creativity in exploring natural ingredient solutions.
- Effective communication and presentation skills for internal and external stakeholders.
- Ability to collaborate effectively with cross-functional temas, including flavorists, application scientitst, and regulatory tems.
- Proficiency with scientific softwarre for data analysis, reporting, and instrument control.
- Ability to work independently in a fast-paced research and development environment.
