Food & Beverage Manager
Job OverviewSummary of PositionThe Food & Beverage Manager oversees all food and beverage operations within the hotel, ensuring the delivery of exceptional guest experiences while maximizing profitability.
This role includes responsibility for managing staff, maintaining quality standards, collaborating on menus, ensuring compliance with health and safety regulations, and driving revenue through innovative strategies.
In addition, this position will take a leadership role in the development and execution of the bar program across The Terrace Restaurant, Maybourne Bar, and Whiskey Bar, In Room Dining with a focus on innovation, training, vendor partnerships, and increasing beverage-driven revenue.
Roles and ResponsibilitiesCore functions of the position, but are not limited to the following;
Food & Beverage Operations- Oversee daily food and beverage operations, including restaurant(s), bar(s), and room service
- Ensure all services meet or exceed guest expectations in quality, consistency, and hospitality
- Maintain a visible presence on the floor to support operations and engage with guests
- Address guest feedback promptly and effectively to ensure high satisfaction levels
Bar Program Leadership (Expanded Scope)- Lead and manage the bar program across Terrace Restaurant, Maybourne Bar, and Whiskey Bar
- Develop and continuously refine cocktail, wine, spirits, and coffee offerings aligned with seasonal trends and guest preferences
- Drive initiatives to increase average check and beverage sales, with a strong focus on upselling and product knowledge
- Ensure consistency, creativity, and elevated presentation across all bar offerings
- Collaborate closely with culinary and leadership teams to align food and beverage experiences
Team Leadership, Training & Development- Recruit, train, and mentor colleagues, fostering a culture of teamwork, accountability, and excellence
- Develop and lead structured training programs for:
- Wine, spirits, cocktails, and coffee knowledge
- Service standards and guest engagement
- Upselling techniques to drive revenue
- Conduct regular team meetings, performance evaluations, and coaching sessions
- Provide constructive feedback, recognition, and ongoing development opportunities
Scheduling & Staffing- Create and manage team schedules to ensure appropriate staffing levels during peak and off-peak periods
- Support operational efficiency while maintaining high service standards
Vendor Relationships & Product Management- Build and maintain strong relationships with wine, spirits, and coffee vendors
- Lead sourcing, tastings, and selection of beverage products
- Coordinate with vendors for pricing, promotions, and product development opportunities
- Maintain communication with coffee vendors for equipment maintenance and quality consistency
Inventory & Cost Control- Monitor inventory levels and manage procurement to ensure consistent supply while minimizing waste
- Oversee beverage inventory counts, variance tracking, and cost controls
- Ensure accurate ordering and stock management across all bar operations
- Utilize systems such as Micros Symphony and inventory tools as required
Operational Standards & Maintenance- Conduct regular inspections to maintain cleanliness, organization, and safety standards across all outlets
- Develop and enforce a bar cleaning and maintenance calendar for all venues
- Ensure proper handling and maintenance of all bar and coffee equipment
- Implement and monitor safety protocols related to food, beverage, and equipment handling
Guest Experience & Revenue Growth- Enhance guest satisfaction through personalized and memorable beverage experiences
- Monitor guest feedback and identify opportunities to improve the bar experience
- Collaborate with the marketing team to promote special events, seasonal menus, and beverage-driven activations
- Identify opportunities to increase revenue through programming, promotions, and service strategies
Compliance & Standards- Ensure compliance with all local, state, and company health, safety, and hygiene regulations
- Maintain full adherence to company policies, procedures, and brand standards
Qualifications- Bachelor's degree in hospitality management, Business Administration, Culinary Arts, or related field preferred
- 3-5+ years of experience in Food & Beverage management within a luxury hotel environment
- Strong knowledge of wine, spirits, cocktails, and bar operations
- Proven ability to manage teams, drive revenue, and control costs
- Excellent communication and interpersonal skills
- Strong financial acumen, including budgeting and inventory control
- Familiarity with POS systems (Micros Symphony), Evention, and Microsoft Office
- Knowledge of California labor laws and tip structures preferred
- ServSafe certification or equivalent preferred
Physical Requirements- Ability to stand, walk, bend, and remain active for extended periods during shifts
- Ability to lift and move items up to 40 pounds as needed
- Combination of office-based administrative work and floor-based operational presence
