Description

The Director of Operations at Gravity Haus Breckenridge is the senior leader responsible for driving strategic and operational excellence across Food & Beverage and Membership. This role requires a deeply experienced F&B operator who can lead high-performing restaurant teams while also overseeing the full membership ecosystem - including co-working, fitness, amenities, and member programming.

You will directly oversee the Food & Beverage Managers and the Executive Chef, and be responsible for FOH and BOH operations for the Food and Beverage Team. You will oversee the Membership Manager and will steward the overall member experience, and all community-building initiatives. This position is accountable for financial performance, team leadership, operational execution, member satisfaction, and revenue growth.

The Director of Operations collaborates closely with the Hotel General Manager (managed separately by Vail Resorts) to ensure alignment across lodging, guest service, and GH-operated amenities. This role reports directly to the Area General Manager of Gravity Haus Vail & Breckenridge.

Key Responsibilities

Financial Leadership & Accountability
  • Own full P&L performance for F&B and Membership departments.
  • Lead proactive forecasting and re-forecasting across all revenue and expense lines: food, beverage, private events, membership activations, and retail.
  • Identify and execute incremental revenue opportunities through private dining, group sales, partnerships, and new offerings across F&B and member amenities.
  • Drive disciplined cost control and margin improvement through COGS management, labor optimization, and operational efficiency.
  • Lead monthly financial reviews with key stakeholders, using data to guide decisions and course-corrections.
  • Ensure timely invoice processing, payroll accuracy, and budget compliance.

Food & Beverage Oversight & Team Leadership
  • Provide direct oversight to the Executive Chef and the Restaurant General Manager; all restaurant managers report to the GM, who reports to you.
  • Mentor and support the F&B leadership team to drive performance, accountability, and leadership development.
  • Run daily pre-shift meetings focused on service standards, team alignment, member touches, and business priorities.
  • Maintain tight controls over labor scheduling, guest experience, and menu execution.
  • Partner with the Executive Chef and Bar Manager on menu development, pricing strategy, and product innovation.
  • Collaborate on sales reporting and menu engineering to elevate high-margin items and retire underperformers.
  • Ensure consistent execution of key operating practices including inventory (monthly), payroll (weekly), and compliance protocols.
  • Engage and partner with Marketing to drive membership acquisition and retention, and F&B revenue and covers

Membership & Amenities Leadership
  • Serve as the on-site leader for the Gravity Haus Breckenridge membership experience.
  • Ensure coworking, fitness, and member amenity spaces operate at full potential and deliver exceptional member value.
  • Monitor and improve member satisfaction through feedback loops, engagement initiatives, and programming.
  • Collaborate with fitness coaches to ensure classes, personal training, and recovery services meet GH brand standards.
  • Support membership sales and retention through presence, programming, and community building.
  • Support membership, Events, and Marketing teams to host, plan, and support on-property activations.

Cross-Department & Hotel Collaboration
  • Act as the primary Gravity Haus liaison to the Hotel GM (Vail Resorts) to align lodging, guest service, and member/F&B strategies.
  • Coordinate across departments to ensure operational consistency, mutual support, and guest/member satisfaction.
  • Help build a culture of high performance, trust, and shared accountability between hotel operations and GH-operated amenities.

Events, Private Dining & Revenue Growth
  • Work with the Member Sales Manager and Membership Manager to drive bookings in newly renovated lounge and dining spaces.
  • Strategize with F&B and Marketing teams to build programming that generates new revenue streams and attracts locals and members.
  • Lead development and execution of group sales packages, buyouts, and creative event offerings.

Brand & Cultural Leadership
  • Be a highly visible, engaged leader - present daily in the restaurant, co-working space, and recovery areas.
  • Ensure Gravity Haus values are lived out through every guest and member interaction.
  • Build and nurture a team culture rooted in performance, respect, fun, and hospitality.
  • Serve as a champion of our mission to create a globally conscious community for the modern adventurer.

What We're Looking For
  • Minimum 3 years of management leadership in an upscale, high-volume restaurant with exceptional food and beverage standards.
  • Strong leadership acumen with the ability to align culture, standards, and strategic direction.
  • Excellent emotional intelligence and interpersonal skills; able to build strong relationships with team members and community members.
  • Demonstrated ability to develop and empower talent, creating growth opportunities and managing the full team member lifecycle.
  • Experience in both independent and corporate restaurant environments with annual revenue over $3M per location.
  • Ability to read and interpret financial statements and budgets, aligning quarterly goals with daily operational focus.
  • Strong financial acumen and deep experience with budgeting and forecasting.
  • Proven success building high-expectation service programs in hospitality.
  • Ownership mindset - identifies operational gaps, builds infrastructure, and drives long-term stability.
  • Successful collaboration with cross-functional leadership to build strategy, systems, and operational excellence.
  • Outstanding communication skills and ability to provide strategic guidance through periods of change and growth.

Salary Description

$95,000-$110,000/annually DOE
