Summary: Thompson Dallas is seeking an experienced Director of Food & Beverage to lead the hotel's Food & Beverage division, including restaurants, bars, banquets, in-room dining, pool operations, and hotel amenities. As a member of the Executive Committee, this leader will have overall accountability for the division's people, operations, financial performance, and guest experience.
This is a visible, hands-on leadership role for someone who brings strong business acumen, operational discipline, creativity, and a passion for hospitality. In close partnership with the Executive Chef and Food & Beverage leadership team, the Director will develop high-performing teams, elevate our outlets, and ensure experiences consistently reflect the Thompson lifestyle brand.
The Director will also play a key role in outlet activations, special events, and programming, creating experiences that drive revenue, guest engagement, and local relevance.
People Leadership - Lead, coach, and develop Food & Beverage leaders and colleagues, fostering a culture of accountability, collaboration, inclusion, and continuous improvement.
- Oversee recruitment, onboarding, performance management, retention, development, and succession planning across the division.
- Maintain a visible and engaged leadership presence, providing clear direction, coaching, support, and accountability.
- Partner closely with the Executive Chef and Culinary leadership to align priorities, staffing, performance, and colleague development.
- Identify and develop future leaders through meaningful coaching, timely feedback, and development opportunities.
Operations & Guest Experience - Provide strategic and operational leadership across all Food & Beverage operations while ensuring consistent execution of Hyatt and Thompson brand standards.
- Champion service excellence across every outlet, event, and guest touchpoint.
- Drive strong standards of cleanliness, organization, safety, sanitation, product quality, inventory controls, and operational readiness.
- Maintain a visible leadership presence during high-volume periods, special events, and other critical business moments.
- Monitor guest feedback and operational performance, identifying trends and implementing actions that improve satisfaction and loyalty.
- Proactively identify operational needs, staffing challenges, and business risks and ensure timely solutions.
Banquets, Activations & Programming - Provide strategic oversight of banquet operations, ensuring strong operational execution, financial performance, and exceptional guest experiences.
- Ensure alignment across Food & Beverage, Culinary, Events, and Sales to support seamless execution of meetings, weddings, social events, and large-scale programs.
- Play a key leadership role in outlet activations, special events, seasonal programming, and distinctive Food & Beverage experiences.
- Collaborate across Culinary, Sales, Events, and Marketing to develop programming that drives revenue, strengthens our outlets, and builds guest and local engagement.
Financial Acumen & Business Performance - Own the financial performance and operating results of the Food & Beverage division.
- Maintain a strong understanding of P&L performance, forecasting, labor productivity, food and beverage costs, operating expenses, and key business drivers.
- Develop and execute strategies that improve revenue, efficiency, profitability, and the guest experience.
- Partner with Culinary and Food & Beverage leaders to optimize menu performance, labor, costs, and overall profitability.
- Review and validate financial results and confidently represent Food & Beverage in Executive Committee and ownership discussions.
- Anticipate business needs and risks and proactively implement solutions that support long-term performance.

Qualifications:- Proven Food & Beverage leadership experience within a full-service, luxury, or lifestyle hotel environment.
- Strong knowledge of restaurant, bar, banquet, and hotel Food & Beverage operations.
- Demonstrated ability to lead, coach, develop, and hold high-performing teams accountable.
- Strong financial acumen with experience managing P&L performance, forecasting, labor, costs, and profitability.
- Experience with Food & Beverage activations, special events, or revenue-generating programming preferred.
- Excellent communication, collaboration, organizational, and decision-making skills.
- Ability to balance strategic leadership with a visible, hands-on presence throughout the operation.
- Ability to work a flexible schedule, including evenings, weekends, holidays, and special events based on business needs.
- Ability to stand and walk for extended periods and navigate Food & Beverage outlets, kitchens, banquet spaces, stairs, and service areas.
- Ability to occasionally lift, carry, push, or pull up to 25 pounds.
