Responsibilities

  • Inspect and maintain kitchen equipment, reporting any deficiencies for prompt repair.
  • Communicate operational needs and service priorities across departments to enhance efficiency.

The Executive Steward is a key member of the culinary team, responsible for overseeing the daily operations of the hotel's stewarding department. This role involves ensuring the highest standards of cleanliness and maintenance in all food production and service areas. You will manage, train, and schedule stewarding staff to uphold our commitment to excellence and guest satisfaction.

Key responsibilities include but are not limited to:
  • Supervision & Management: Lead the daily operations of the stewarding department across kitchens, outlets, receiving and storage areas, employee dining, and banquet support, prioritizing assignments and service levels in accordance with Hyatt standards and property procedures. Remain hands-on when needed by assisting with dishwashing, cleaning, transporting, setup, breakdown, and other stewarding duties during peak periods, staffing gaps, and special events.
  • Banquet & Event Logistics: Organize the logistics for banquet events and functions using BEOs/event orders and distribution (distro) plans. Coordinate the timely delivery, setup, replenishment, breakdown, and return of china, glassware, silverware, cookware, equipment, and other serviceware with the Banquets, Culinary, and Events teams.
  • Sanitation & Food Safety: Maintain the highest standards of cleanliness, sanitation, and organization in all food production, service, stewarding, and storage areas, supporting Hyatt food-safety and sanitation requirements.
  • Staff Management: Recruit, train, schedule, coach, and supervise stewarding colleagues. Adjust staffing and assignments to business levels, event requirements, and operational priorities while fostering teamwork and accountability.
  • Inventory & Cost Control: Establish and maintain par levels for china, glassware, silverware, cookware, cleaning chemicals, and operating supplies. Monitor usage, breakage, loss, waste, and labor productivity to support departmental cost objectives.
  • Equipment & Preventive Maintenance: Inspect, operate, clean, and maintain dishwashing systems, kitchen equipment, smallwares, and stewarding tools. Report deficiencies promptly and coordinate repairs with Engineering and approved service providers.
  • Cross-Functional Coordination: Communicate operational needs, event requirements, and service recovery priorities with Culinary, Food & Beverage, Banquets, Purchasing, Receiving, Engineering, and other hotel departments to ensure seamless service.
  • Compliance, Safety & Sustainability: Follow Hyatt policies, applicable health and safety regulations, chemical-handling procedures, PPE requirements, and sustainable operating practices. Complete required inspections, checklists, logs, and departmental reporting accurately and on time.
