Executive Sous Chef plays a key role in supporting the Executive Chef in the daily management of kitchen operations while maintaining a safe, clean, and sanitary environment for all staff. This position oversees and participates in the preparation of meals in accordance with established corporate standards within a 700-bed acute care Kosher facility that includes catering and retail services.
Key Responsibilities- Partner with the Executive Chef to ensure adherence to sanitation standards, ServSafe guidelines, safety protocols, production requirements, and merchandising expectations
- Lead, train, and motivate back-of-house team members to achieve operational goals and deliver consistent, high-quality service
- Ensure food is prepared and presented with creativity, consistency, and cost efficiency
- Support all aspects of kitchen operations, including menu planning, ordering, inventory control, and food production
- Monitor and help manage food and labor costs while maintaining budget targets
- Assist in the development and implementation of new culinary programs in collaboration with marketing and culinary teams
- Provide day-to-day kitchen oversight, ensuring quality, minimizing waste, and managing high-volume production
- Perform other duties as assigned
Qualifications- Bachelor's degree in Culinary Arts, Food Service Management, or related field, or an A.O.S. in Culinary Arts, or equivalent experience
- 3-5 years of progressive culinary experience, including high-volume production leadership
- Demonstrated expertise across multiple kitchen stations and functions
- Strong ability to think quickly and adapt in a fast-paced environment
- Solid knowledge of food costing, ingredient identification, and quality standards
- Excellent communication, interpersonal, and customer service skills
- Food safety certification (ServSafe and/or HACCP preferred)
- Knowledge of current culinary trends and a passion for innovative presentation preferred
- Experience in a Kosher kitchen and familiarity with kosher cuisine strongly preferred
- Knowledge of ethnic and regional cuisines a plus
