SHIFTS AVAILABLE: Open availability required

PAY: Starting at $100,588.80 annually, with opportunities for annual increases

SCOPE OF POSITION:

Responsible for the coordination, administration and direction of Front of House Food and Beverage activities on property, in alignment with the Mission and Objectives of the Company and in full accordance with operational Policies and Procedures and Gaming Regulations. Works in partnership with Executive Chef to achieve operational excellence.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

The following is a list of the main duties and responsibilities. However, other duties may be assigned as deemed necessary by management. All duties must be performed in accordance with Tribal, Federal, and other applicable requirements, organizational specific policies, procedures and practices.
  • Creates, develops and implements an effective strategy of organization within the Food and Beverage department.
  • Formulates, administers and enforces departmental policies and performance standards.
  • Participates in setting marketing policies and goals designed to attract and service guests.
  • Ensures departmental compliance with applicable Federal, State and Tribal laws governing Food and Beverage.
  • Confers with VP of Food & Beverage to review property wide and departmental Team Member concerns, discussing needed changes and potential solutions.
  • Ensures efficient scheduling and payroll management to provide proper staffing levels during breakfast, lunch and dinner rushes, as well as high-volume special events, while minimizing labor during off-peak hours.
  • Facilitates proper training and follow-up to ensure that WEEA service standards are met or exceeded during all phases of guest interaction.
  • Provides ongoing review of point of sale transactions to ensure that proper procedures are being followed. Identifies and recommends procedural changes to prevent fraud or theft. Trains supervisory staff to identify and report suspicious transactions.
  • Sets priorities for all Food and Beverage Managers and F&B Multi Venue Managers, providing guidance and assistance as needed.
  • Participates in special projects as requested.
  • Establishes proper policies and procedures, and internal controls over the operations of all Food & Beverage outlets.
  • Establishes performance and profit objectives for short-term and long-term goals. Prepares or approves annual budget for all Food & Beverage outlets.
  • Reviews departmental reports, addressing potential conflicts and/or misinformation.
  • Ensures a maximum level of service and guest satisfaction throughout the property, in the area of Food and Beverage, is achieved and maintained.
  • Facilitates the flow of information throughout the property, by organizing and presiding over regularly scheduled departmental meetings with all Food and Beverage Management.
  • Held accountable, to the highest degree, for the accuracy and thoroughness of departmental records and reports.
  • Maintains the highest level of confidentiality.
  • Responsible for maintaining a consistent, regular attendance record as outlined in the FireKeepers Casino Hotel Attendance Policy.
  • Outstanding example of and a credit to FireKeepers Casino Hotel.


SUPERVISORY RESPONSIBILITIES:

Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include maintaining sufficient staffing levels; interviewing, hiring, and training Team Members; planning, assigning, and directing work; appraising performance; rewarding and disciplining Team Members; addressing complaints and resolving problems.

MINIMUM REQUIRED QUALIFICATIONS:

An applicant's education, training and experience must be sufficient to demonstrate that the applicant possesses the ability to successfully perform each of the essential duties and responsibilities satisfactorily. The requirements listed below are generally representative of the education, experience, and skills and/or abilities required to enable one to successfully perform the essential duties and responsibilities:

Proficiency in both written and verbal English communication is required.

Seven years' experience in Food & Beverage Management, in a high-end, full-service, multi-venue operation at a casino or hotel/resort operation. Extensive, demonstrable, knowledge of food and alcoholic beverages and pairings. Extensive wine knowledge. Proficiency in programming, report generation and operations of Point of Sale systems (Micros/InfoGenesis/Aloha). Excellent communication, both oral and written, and organizational and analytical skills. Tips/Serv Safe Certified.

GENERAL OR PREFERRED QUALIFICATIONS:

Bachelor's Degree. Three years' experience at Director level.

Successful completion of any of the FireKeepers Casino Hotel Track Training programs. WEEA Certified.
