Full Job Description
Description

Sugar Bowl Resort is seeking a visionary, hands-on Culinary Executive to lead the culinary program at the Village Lodge. This role sets the culinary vision and identity for all village venues, shapes menus across the Yarrow, Belt Room and Terrace, and carries a genuine culinary voice across all food and beverage programming on the mountain - building a program that guests feel and talk about.

Who You Are:
• A hospitality-minded culinary leader who believes great service matters as much as great food
• A builder of menus, teams, and culinary systems that hold up across multiple venues
• Passionate about ingredient-driven, seasonally inspired cooking that reflects the alpine setting
• Equally comfortable developing a menu, mentoring a chef, reviewing financial performance, and solving an operational challenge mid-service
• Skilled at balancing culinary creativity, operational discipline, and profitability
• A visible leader who sets the tone through presence, standards, and example - on the line and across the village

What You'll do:

Culinary Leadership & Program Direction
• Set and maintain the culinary vision and identity for all village venues - a program that guests feel and talk about
• Develop and evolve menus across the Yarrow, Belt Room, and Terrace in alignment with the village's culinary positioning
• Carry a genuine culinary voice across all food and beverage programming on the mountain - influence, not authority - ensuring a coherent standard and spirit from the cafeterias to the dining room
• Drive ingredient-focused, seasonally driven menus that reflect the alpine setting and the quality standard the village program aspires to
• Champion product quality, presentation standards, and consistency across all outlets

Village Operations Management
• Oversee day-to-day culinary and F&B operations across all village venues, ensuring quality, efficiency, and exceptional guest experience
• Lead the village team including the Executive Chef, F&B General Manager, and Front-of-House Lead
• Manage opening and closing procedures across all village revenue-generating departments
• Coordinate village inward goods via gondola logistics - managing procurement, scheduling, and receiving independently from resort base operations
• Ensure compliance with all applicable health codes, food safety regulations, and resort standards across all village outlets
• Maintain a current Manager ServSafe Certificate

Retail & Provisions Program
• Lead the Provisions and Tuck Shop as genuine culinary retail expressions - product curation, F&B storytelling, margin management, and physical guest experience
• Develop and manage the provisions product range, charcuterie program, grab-and-go offerings, and retail F&B identity
• Oversee purchasing, vendor relationships, inventory controls, and cost management for the retail program
• Ensure the retail program is an extension of the village's culinary identity - not an afterthought

Disney Deck F&B Program
• Design and execute the F&B program for the Disney Deck
• Develop a seasonal, quality-led menu that operates efficiently at Deck scale without sacrificing culinary standard
• Oversee staffing, service flow, and execution for Deck F&B operations throughout the season
• Coordinate Deck programming with resort guest services and events as needed

Financial Management & Budget Oversight
• Develop, propose, and manage the annual village F&B operating budget, revenue forecasts, and product pricing strategy
• Monitor financial performance against budget; identify variances and implement corrective action
• Oversee all financial controls including cash handling, POS reconciliation, and inventory management across village outlets
• Drive revenue growth through menu development, programming, and the overall quality of the village guest experience
• Manage cost of goods across all village outlets; set and hold standards for yield, waste, and purchasing efficiency

Team Leadership & Culture
• Lead, mentor, and develop the village culinary team; build a culture people are proud to be part of
• Oversee hiring, onboarding, training, performance management, and scheduling for all village F&B staff in accordance with company policies and applicable state and federal regulations
• Build and hold a high-performing team through a demanding seasonal cycle without burning the team out
• Conduct regular team meetings to align the village program and drive engagement
• Set and maintain front-of-house service standards - the guest experience is as important as the food

Guest Experience & Brand
• Set the standard for guest experience across all village F&B - from a casual Tuck Shop grab to a full Yarrow dinner
• Be present and visible in the village; comfortable being the face of the program with guests, partners, and media when it counts
• Partner with Sugar Bowl's marketing team on F&B storytelling, social content, and programming that builds the village's culinary identity
• Identify and develop partnership opportunities and special programming that positions the village as a culinary destination beyond the ski season

Physical Requirements:
• Ability to stand, walk, and move throughout multiple venues and kitchens for extended periods, including on uneven or outdoor terrain
• Ability to lift and carry up to 40 lbs (ingredients, provisions deliveries, and kitchen equipment)
• Ability to work in varied conditions, including outdoor service areas and gondola-based goods transport during winter weather
• Ability to work evenings, weekends, and holidays, including peak ski season periods
• Ability to move quickly and respond to time-sensitive operational needs across venues

Winter Benefits:
• Generous flexible and paid time off
• Employer sponsored 401k plan after 1,000 worked hours and one (1) year of service
• Medical, dental, and vision benefits
• Employer paid life insurance
• Additional voluntary benefits (AD&D, critical illness, etc.)
• Employee Assistance Program (EAP)
• Professional development opportunities
• Free ski and tubing passes for employees
• Free ski passes for dependents
• 50% off food at our restaurants
• Free group ski and snowboard lessons for employees
• Employee discounted lift tickets for family and friends
• Lift ticket discounts at multiple resorts including 24 Mountain Collective destinations
• Hotel discounts
• Employee ski reciprocal programs
