JOB SUMMARY

The Director of Food & Beverage is responsible and accountable for the daily operations of all Food and Beverage outlets.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Manages concessions, restaurants, and other food and beverage service venues.
  • Hires, trains and manages a high performing F&B team. Motivates team to perform 'Winning Experiences' for our guests and fellow Team Members.
  • Responsible for the enforcement of all company policies and procedures as well as standards of quality, safety and performance.
  • Strategically coordinates with staff to plan menu and pricing.
  • Responsible for Food and Beverage compliance of gaming and health regulations.
  • Develops annual budgets and business plans and works with the F&B team to achieve results.
  • Coordinates with Marketing to prepare for events and promotions that include Food and Beverage.
  • Maintains a cooperative relationship with all property management and vendors to ensure goals and expectation are achieved.
  • Review staffing levels to maintain budgeted levels of employment. Delegate authority and assign responsibilities.
  • Other duties as assigned.


REQUIRED SKILLS AND ABILITIES

  • Financial to include budget preparation and reporting.
  • Public relations and guest service skills.
  • Supervisory skills; maintaining a professional working relationship among all personnel.
  • Oral and written communication skills.
  • Willingness to assume overall responsibility relative to the performance of the property.
  • Ability to analyze planning documents results, and revise for continued improvement.


EDUCATION AND EXPERIENCE

  • Ten to fifteen years of experience in gaming, hospitality, or related entertainment industry preferred.
  • Five years of experience managing managers and/or in a Leadership role required.
  • 4-year degree in a related field or equivalent work experience in excess of 10 years is preferred.
  • Able to obtain a valid Racing License.
