Description

The Food & Beverage Manager, Pool & In-Room Dining (IRD) is responsible for leading the daily operation, service execution, team performance, and guest experience for El Encanto's Pool and In-Room Dining operations. This role ensures that both areas operate with consistency, efficiency, and a strong commitment to personalized luxury hospitality while supporting the broader goals of the Food & Beverage department.

Working closely with the Director of Food & Beverage, Culinary leadership, and hotel department leaders, the Food & Beverage Manager, Pool & IRD oversees service standards, staffing, scheduling, training, operational readiness, guest recovery, and communication between the Pool, IRD, Kitchen, Front Office, Housekeeping, Engineering, and other supporting teams. The position requires a highly visible, hands-on leader who can balance elevated guest service with sound operational and financial judgment.

Pool & In-Room Dining Operations
  • Lead daily Pool and In-Room Dining operations, ensuring polished, timely, and personalized service throughout the guest experience.
  • Maintain a visible leadership presence during service, anticipating guest needs and resolving concerns with professionalism and care.
  • Oversee Pool food and beverage service and In-Room Dining order execution, presentation, delivery, and guest follow-up.
  • Partner closely with Culinary and hotel departments to coordinate special requests, dietary accommodations, VIP experiences, and operational needs.
  • Ensure all Pool and IRD service areas, equipment, and guest-facing spaces are clean, organized, properly maintained, and service-ready.
  • Maintain strong knowledge of menus, beverages, resort offerings, and property activities to confidently support the guest experience.


Team Leadership & Service Excellence
  • Lead, coach, and develop Pool and IRD team members through daily direction, pre-shift briefings, hands-on training, feedback, and ongoing performance support.
  • Support hiring, onboarding, scheduling, training, and performance management in partnership with Food & Beverage leadership and Human Resources.
  • Plan staffing and daily assignments based on business levels, guest demand, and operational priorities.
  • Reinforce El Encanto's service standards, grooming expectations, safety practices, responsible alcohol service, and professional conduct.
  • Foster a collaborative, respectful, and accountable team culture focused on exceptional hospitality.


Business & Operational Performance
  • Monitor revenues, labor, overtime, operating expenses, inventory, supplies, and other key performance indicators for Pool and IRD.
  • Support forecasting, budgeting, labor planning, inventory management, and departmental cost-control initiatives.
  • Ensure guest charges, service charges, discounts, voids, and other point-of-sale activity are processed accurately and according to established procedures.
  • Communicate business levels, VIPs, special events, guest needs, and operational priorities effectively across Culinary and hotel leadership.
  • Support seasonal programming, special events, and resort activations involving Pool and In-Room Dining.
  • Identify opportunities to strengthen guest satisfaction, service flow, team productivity, cost management, and overall operating efficiency.
