  • Follow AVI approved standardized recipes and holdproduction team accountable to following the proper portion control methods and techniques
  • Understand basic principles of therapeutic diets and/or acknowledge location of resources available when clarification of diet is needed
  • Oversee all production of food in every aspect of account
  • Hire, orient and train production team members to ensure that the highest standards of quality are met; Create and manage production team schedule
  • Conduct regular physical inventory of food and non-food items; maintain appropriate inventory as necessary
  • Establish controls to minimize food and supply waste and theft
  • Prepare necessary data for the budget in area ofresponsibility; Project annual food and labor costs and monitor actual financial results; Take corrective action where necessary to help ensure that financial goals are met
  • Consult with catering team about food production aspects of special events being planned; Plan and supervise special events
  • Demonstrate how different cooking equipment such asovens, grills, kettles and steamers are used to ensure food quality and presentation; Advise production team onvarious cooking procedures
  • Handle any food preparation issues (i.e. food shortages, excesses, outdated products, poor quality) by taking action to correct problems


  • Comprehensive knowledge and application of nutrition services is required
  • General knowledge of nutrient analysis required
  • Must possess strong follow up skills
  • Must utilize great critical thinking skills in day-to-day operation
  • A passion towards safety and sanitation in all he or she does
  • Strong level of accountability to themselves as well asothers
  • Minimum education includes a High School Diploma or equivalent, with ability to read, write, speak and comprehend the English language
  • Ability to verbalize directions clearly and accurately; and the ability to perform mathematics as they relate to thequantifying of recipes and production
  • minimum of 5 years cooking experience of quantity food production and experience directly related to theduties specified in the healthcare or retail environment isrequired; Culinary certification preferred
  • The ability to follow and give written and verbal instructions; Must have a basic understanding of diet principles; Must extensively understand food preparation and cooking methods
  • The ability to comprehend and guide others inunderstanding guest service principles as they relate tofood production and the flow of the foodservice operation
  • Ability to supervise and train associates, to include organizing, prioritizing and scheduling work assignments isrequired
  • Professional appearance must be maintained at all times
