Wynn Boston Harbor is a luxury global destination gaming resort that will feature 671 hotel rooms with sweeping views of the Boston skyline and Boston Harbor, ultra-premium spa, luxury retail, high-end dining, and state-of-the-art ballroom and meeting spaces. The Wynn Boston Harbor Director – Health and Food Safety is responsible for the overall safety of all guests (internal and external) as it relates to public health and food safety. This position is responsible for developing, improving, implementing, and auditing food safety and quality programs and systems.

This role supports the executive leadership team and reports directly to the Executive Chef and applies federal, state and local food code regulations and also as serves as a liaison and subject matter expert with government agencies primarily in food safety and coordinates inspections in specialty areas including but not limited to pools, environmental health, solid waste, and public accommodations.

Responsibilities include, but are not limited to; designing and implementing property food safety and quality control strategy and ensuring alignment with overall Wynn Boston Harbor strategy; maximizing opportunities for departmental and company success; maintaining all Wynn Standards; and ensuring excellent guest and team member experience.

  • Held accountable for departmental performance, and the accuracy, confidentiality, and thoroughness of departmental policies and procedures; records and reports.
  • Oversees the performance of team members under his/her area of responsibility.
  • Monitors all activities of the department to ensure that all applicable internal policies, federal and state laws, rules, regulations and controls property wide are enforced.
  • Administers departmental operating budget and financial controls. Responsible for financial planning, forecast, labor, and payroll for areas of responsibility.
  • Ensures department delivers and maintains a maximum level of property-wide service and satisfaction.
  • Facilitates communication throughout the property by organizing and presiding over regularly scheduled meetings with team members within the department and with other departments as appropriate to ensure property wide communication.
  • Oversees all hiring, performance management, and employee engagement within the department. Provides training opportunities, constructive and positive feedback to team members within area of responsibility. Creates a motivating environment.
  • Keeps informed of all new developments within the department and makes recommendations designed to maximize department and company success.
  • Effectively manages internal and external guest relations, which may require levels of patience, tact and diplomacy. Responsible for addressing guest and team member issues as appropriate.
  • Manages multiple priorities simultaneously and meets deadlines, often in stressful and high-pressure situations.
  • Must have the ability to promote positive, fair, and ethical relations with all team member, with all Wynn contractors, and in all interactions within the Host and Surrounding communities as an ambassador of the Wynn brand.
  • Guide all aspects of the department and supports in the development, implementation, daily operations, maintenance, and improvement of the food safety and quality assurance (FSQA) programs.
  • Assesses the FSQA program and its implementation.
  • Develops and implements necessary programs to strengthen the system.
  • Issue, review and maintain product specifications, certificates of analysis, and all other QA documents
  • Verify, file, organize, and review all documents pertinent to sanitation, Hazard Analysis and Critical Control Points (HACCP)/ Hazard Analysis and Risk-Based Preventive Controls (HARPC), product recall, and quality control and quality assurance
  • Issue, review and maintain product specifications, certificates of analysis, and all other QA documents
  • Verify, file, organize, and review all documents pertinent to sanitation, HACCP/HARPC, product recall, and quality control and quality assurance
  • Organizes food safety training lessons for new company procedures and reinforce the existing procedures throughout the company.
  • Proactively conduct primary and follow-up inspections of all F&B areas to ensure compliance with state and local health codes.
  • Accompanies Health Department Inspector to front and back of house areas to facilitate inspections.
  • Ensures that new and seasonal concepts are properly permitted.
  • Facilitates continuing education for the following and ensures that F&B management is in compliance with the following required certifications.
  • HAACP training
  • ROP
  • Allergy awareness
  • Certified Food Safety Manager
  • Trains and certifies all employees in proper sanitation and safety regulations in accordance to federal, state, and local health jurisdictions.
  • Reviews securityreports and investigates any noted food borne illness complaints.
  • Works with safety as a priority, and follows department and company safety standards.
  • Maintains relevant knowledge of industry through continuing education and training.
  • Performs any other job-related duties as assigned.

Job Requirements:

Age, Gaming and Certifications:

21 years of age or above.

Will be required to obtain and maintain registration or a license issued by the Massachusetts Gaming Commission.

Must be able to obtain and maintain any licensing or active work cards required, including but not limited to an alcohol awareness card.

Must have and be able to maintain the Registered Environmental Health Specialist / Registered Sanitarian (REHS/RS) license.

Education and/or Experience:

High School Degree or equivalent required.

Sanitation knowledge, culinary knowledge, and safe food handling required.

Minimum 8years of health & food safety management experience, 5 years in a leadership role required.

Requires strong computer skills and proficiency in Microsoft Office.

Candidate must have experience with planning and project management.

Must possess outstanding organizational, interpersonal, and administrative skills, as well as excellent attention to detail.
