Overview

This individual will develop and improve product procedures as needed by converting recipes into repeatable procedures suitable for mass duplication specifically for needs. This will involve supplying recipe yield data to Business Analysis, managing small wares for the new recipe and working with Culinary & Commercialization to develop the procedures. They will provide Restaurant Training all information needed to convert procedures into training materials, including sampling procedures and end product descriptions.



This individual will also support developing and managing food specifications with suppliers. This includes working with Culinary & Commercialization, Supplier Quality & Safety and suppliers to develop specifications and maintain revision control.



This individual will lead Menu Services testing initiatives including resources and equipment needed as well as testing design, execution and reporting.
Responsibilities

Develop and manage food specification management system:

Insures specification development
Coordinates compliance issues with Legal Department and/or Outside Counsel
Provides corporate access and communication
Maintains revision control
Aligns specifications with audit
Secures Supplier Acknowledgement signoff



Leads testing support:

Collects analytical and physical measurements during development
Leads specification development internal testing
Executes packaging design testing
Coordinates sensory testing
Documents all testing data



Develops and improves product procedures:

Converts a culinary recipe into a repeatable industrial procedure suitable for mass duplication
Supplies Business Analysis with recipe yield data for cost control
Documents all methods and keeps documents up-to-date (see 3 below)



Manages smallwares:

Approves and adds new smallwares to the master list
Removes superseded and/or unauthorized smallwares from the master list
Coordinates dissemination of smallware communication
All CFA access to list
Change notices
Revision control



Provide training department with all information needed to convert work methods into training materials of various formats:

Leads demonstrations and walk-throughs
Supports technical data development and interpretation
Coordinates development of end product characteristics

Areas of Focus:


Product Improvement/ Development

Maintains resource documents provided by suppliers and/or vendors
Develops tracking tool of all Menu Services support during development
Participates in market related evaluations
Identifies additional technical resources needed for project success
Facilitates transition of Product Improvement/ Development process
Communicate with OST project transition from Product Development
Schedule product demonstrations or training as needed
Identify timelines to be met
Track progress to assure timelines are met
Communicate with QLS for impact on QRG or RQA initiatives
Coordinates with Supplier Quality & Safety the transition from internal testing to supplier and third party lab audit

Operational Improvements

Prepares procedure for identifying and presenting operational improvement needs for consideration
Establishes a store visitation routine
Establishes an opportunity tracking log including operator/team member feedback
Identifies and facilitates input from other departments
Presents findings to Menu Services Senior Manager
Participates in cross-functional operational improvement initiatives

Minimum Qualifications

At least 5 years of relevant work experience in R&D, quality, or manufacturing
Proven track record of excellence in communication, leadership, problem solving, and analytical skills
In-depth project management experience
Proven ability to influence key stakeholders along the project decision track and across multiple areas of the organization
Ability to raise, manage, and mitigate project issues and risks
Proven success in multi-tasking and managing multiple projects simultaneously
Experience in supporting the work of multiple leaders
Proficiency in Microsoft Office and Apple computer software applications
Experience in designing experiments, process and testing
Experience in food, analytical and/or microbiology laboratory
Training in statistical process control
Travel expectations: up to 25 %
